‘BIDNI’ OLIVE OIL

DARK CHOCOLATE

Malta boasts a long tradition tied to growing olives as witnessed by many village names. The cultivar known as ‘Bidni’ is endemic to Malta but, until a few years ago, it was virtually unknown, with the tree thriving only in a stretch of woodland between Bidnija and Wardija.

‘TA’ XWEJNI’ SEA SALT

DARK CHOCOLATE

Only a handful of Maltese salt pans, locally referred to as salini, remain today. This chocolate bar is our rendition of the timeless, age-old craft of salt farmers, who have harvested salt traditionally for over 400 years.

Tasting Notes

Hand harvested sea salt from Ta’ Xwejni Salt Pans lightly sprinkled over Dark Chocolate. Its delicate texture and gentle saltiness bring out the complexities of our dark chocolate blend.

MALTESE COFFEE

DARK CHOCOLATE

A recipe of select raw beans and spices revives a taste so prevalent in Malta’s yesteryears. Intense dark chocolate rounded by an aromatic, strong coffee infused with roasted chicory, aniseed and cloves.

Dark Chocolate blended with our signature, specialty grade Maltese Coffee Blend. The herbacious & spicy tones of aniseed & cloves beautifully balances the robust, intense dark chocolate.

PEPPERED CHEESELETS

DARK-MILK CHOCOLATE

No trip to Gozo is complete without a taste of traditional Gbejniet; delicious, round white cheeselets made from sheep’s or goat’s milk, dried in special, ventilated boxes and subsequently spiced in wine vinegar & topped with crushed pepper.

Tasting Notes

Taking inspiration from our obsession with cheese, we have embraced goats’ milk to create an alternative milk chocolate bar. Grassy, creamy, fresh, and with a hint of sour; our peppered cheeselets chocolate is something else.

CAROB CARAMEL

DARK CHOCOLATE

The carob tree is so iconic in Malta, that many mistake it for the national tree. One of the oldest Mediterranean trees that yields pods, for centuries
commonly used as a chocolate replacement, and sold during the various processions preceeding Easter.

Dark Chocolate with Carob Caramel bits. A crunchy, sweet, dark chocolate full of texture.

NOUGAT

DARK CHOCOLATE

Nothing reminds of local festa and fireworks more than the taste of traditional Maltese Nougat; a recipe with roots dating back to the Knights of St. John. Street hawkers line up selling ‘Qubbajt’, blocks of rich, caramel and nut concoctions.

Tasting Notes

This Dark Chocolate Bar is fireworks in your mouth. A destructed recipe of the almond brittle (eggless) hard nougat. Heaps of Almonds, Hazelnuts and Caramel bits with a sprinkle of Cinnamon.
